Last December 2023, The New York Times, a globally influential culinary media outlet, selected the pork bone soup (Dweji Gomtang) from a Korean restaurant as one of the best dishes in New York City, praising its exceptional taste and positive impact on health.

Pete Wells, the restaurant critic who published the selection , lavishly praised the dish in June 2023, stating, "It provides a broth so good you could eat it every day, offering a comforting happiness, especially on days with bad news."

The unique flavor and healthiness of Dweji Gomtang have captured the attention of New York's food enthusiasts.

The New York Times emphasized not only the taste and quality of the food but also how it integrates into the local community and culture.

The selection of Okdongsik, located in Koreatown in Manhattan, symbolizes the acknowledgment of pork bone soup within such standard.

Dweji Gomtang is made with fresh and high-quality ingredients, typically simmered slowly for an extended period with pork pelvic bones and various traditional Korean herbs, resulting in a deep and rich flavor.

The traditional Korean dish is also known for its unique preparation, where rice is rolled in a transparent broth, providing a distinct, deep, and hearty taste that has garnered curiosity and love from many.

The original restaurant Okdongsik, located in Seogyo-dong within Seoul's Mapo-gu since 2016, has been consecutively selected for the Michelin Guide's Bib Gourmand from 2018.

The Michelin Guide has a reputation for showcasing only expensive and upscale fine dining, but Bib Gourmand is part of a guide which includes diverse eateries from local pubs to trendy bistros and street food, aiming to introduce restaurants that offer reasonable prices and excellent food.

The global appreciation of Korean cuisine, particularly through dishes like Dweji Gomtang, indicates an increasing interest in its value, which emphasizes health and nutrition of its meals.

The acknowledgment of Okdongsik in New York reflects the widespread recognition of Korean cusine and its ability to captivate international culinary scenes.

Food culture plays a significant role in representing a nation's power. For example, Japanese sushi, known for its fresh and intricate preparation, became a global cultural product, contributing to Japan's economic growth. Each country's unique food styles and dietary habits are deeply connected to its history, geography, culture, and economic situation.

The production, transportation, storage, sales, and services related to advanced global food trade contribute to a nation's GNP and generate new employment opportunities.

Such cultural exchange through food significantly influences mutual understanding and communication between nations. Food culture also plays a crucial role in table manners, global etiquette, and promoting respect which supports understanding of diverse cultures.

Recent efforts to showcase Korean culture through content like dramas and K-pop have significantly impacted the global perception of Korean cuisine. Dishes like 'chimaek' enjoyed by drama characters and 'jjapaguri' featured in Parasite have gained international popularity, spreading the charm of Korean food worldwide.

Such global recognition of Korean cuisine highlights its increasing popularity and presence on the global culinary stage, bringing joy to those who appreciate Korean tastes. However, along with the spread of food culture, the stage of maturity is also crucial.

K-Food brands should focus on 'glocalization,' adapting to local markets while maintaining a unique identity in the global market. Going beyond spreading awareness of food culture and promoting the brand’s influence while maintaining its uniqueness is a task to accomplish still, which will yield positive effects for the national economy and industry.
